Remember my little garden? Well, at the moment, it is exploding with giant zucchinis. Giant. Zucchinis. Like, I didn't know zucchinis got this big, giant. Like, bigger than my calves, giant. Like, just really big, okay?? Notice the zucchini's in proportion to the chairs? That's how big they are. And, there are about 10 more where these came from…just waiting for me to get them tomorrow.
What is one to do with this much zucchini? You can only saute it so many ways, for so many days, right? Well, grate it up and use it in this recipe. And, grate a whole bunch more up and freeze it in 2 cup portions so you'll be ready to make this magical zucchini bread at any time…even long after your harvest is through.
And look. It's beautiful, and it won't take long until it's gone. You'll actually be thankful for your truckloads of zucchini after one bite of this bread! For us, 1 zucc made 6 cups grated. Just fyi. :)
